You might like the only thing I've ever made with golden mushroom
condensed soup. My first wife LOVED it. It's mushroom gravy, and you
make it with a can of the soup, a half cup of milk, and a capful of
Kitchen Bouquet. She just loved the stuff on mashed potatoes.

The old One Cup Casserole lends itself to either Golden Mushroom Soup or
Cream of Mushroom Soup. That was a church supper/ potluck favorite many
moons ago...... I used to alternate the soups....... talkin' the 1960s
here.... when it was mandatory to use canned soups in casseroles unless
you were a big name Chef. It's probably been 30+ years since I made
this, and will be another 30+ before I make it again. But in the day, I
probably made this at least bi-monthly for Some gathering.

One Cup Casserole

1 C chopped onion
1 C chopped celery
1 C chopped green or red bell pepper
1 stick butter or margarine (!!!!!! eek!!!!!!)
1 can Le Seuer peas, drained
1 can, undiluted, concentrated Cream of Mushroom soup or concentrated
Goldden Mushroom soup
1 C crushed Ritz crackers or Pepperidge Farm stuffing mix

Saute fresh vegetables in melted butter in skillet, pour into casserole.
Stir in all but crisp topping. Scatter topping over ingredients. Bake
at 350°F for 1 hour. (Or do it the quicker and easier way and heat
all to near boiling in skillet, pour into serving dish and top with
crisp stuff.)

Am I missing something? I was expecting some sort of meat and starch in
this casserole. Like a pound of ground beef and some raw rice.

I remember my Sainted Mother(tm) making this dish for church socials
around that time too. She added ham or chicken as the cheap protein
and crushed Sarah Lee potato chips for the topping rather than the
stuffing mix or Ritz crackers.

BTW: Half of that stick of butter was for the stuffing mix to allow it
to brown right.

The one I remember that showed up at all the organizational meetings for
various women's clubs was celery, onion, chicken, rice, Cream of Mushroom
soup and topped with chow mein noodles.

Oh yeah, Chunk King's fried noodles! Although I think that's adding on
a decade (70s) to your previous guess. <EG>

Another outhouse express user who can't quote. Pathetic.

The quotes show up fine in my text using QuoteFix. But I'm glad that I
provided you an outlet for your ill humor. If you mean trim, say so. I
thought the original recipe pertinent.

No they don't. Go look at google.

If you want to see my humor I'll be glad to show it to you but that's
not my point.

I would have said that Janet.

>I thought the original recipe pertinent.

It was. But go look at google and see how it shows up. I mentioned
this to Dimitri a day or so ago because he's doing the same thing. To
figure out what people are saying or quoting requires going back to
the preceding post. It's not really hard with my antique reader but I
shouldn't have to do it to figure out who said what.

What's the fix? If there isn't a simple one, killfile me.
