That is how Beef Stroganoff (real one, of course) has always been served
in Russia, or with such alternatives as shoestring potatoes, potato
straws, potato croquettes, or boiled and then roasted potatoes.

Okay; latkes and pirogi was a stretch but I would think gnocchi (or whatever
they are called in "Russian") could be substituted for boiled-then-roasted
or even fried potatoes. I'm not saying it's any less shocking than the
Galloping Gourmet serving it over fries but...

The first published recipe for Beef Stroganoff (1861) did not specify
any accompaniments or side dishes. Later recipes, from cookbooks aimed
at professionals (Beef Stroganoff has always been primarily a restaurant
dish in Russia), nearly always specified deep-fried potatoes, potato
croquettes or boiled and then roasted potatoes. The same cookbooks
listed chips (french-fried potatoes) and potato straws under "deep-fried
potatoes". So, this is quasi official, but of course no one needs to
follow any such recommendations at one's own home.
