Today's Boston Globe has a bit on golden beets that says they "have much
less geosmin (the chemical that makes most beets taste like dirt)".

I don't know about that but when we've grown beets we've found that we
liked the greens from golden beets the best. -aem

I love little dirt chunks boiled with butter, salt & pepper and the smallest of
dashes of vinegar.

But some people think they do. It's their perception and they're
entitled to it, and might even be a genetic thing.

That's because the green is the only edible part. The gob below ground
level is just there to give the greens support to stay kind of upright.

When I make my pickled boiled dirt chunks for the Fair, I feel like it's
not a total waste because I get to eat the greens.

I have, not exactly dirt, but earthy. I like them anyway,
