Default Knife drawer designs

After much recent discussions, I think I will make my drawer in the
following manner. So that each is parallel to the other with the blade
facing downward. Slots to separate each blade by about an inch or less
depending on the blade. This, however may not be a good idea for future
change or expansion. Cleavers, unusually large knives (like cheese knives)
and steels may have to have a separate drawer.

Ideas? Sites?

failed to mention I also have two custom made magnetic racks that really
work well that I got from here http://www.benchcrafted.com/ I think they
have pictures of mine in their gallery but not sure.

I still like the magnetic knife holder you can mount on a wall near
the work area.

Turn the knives over when you put them in the slot? At least, my knife
block allows me to put the knives in blade up or down.

the wood surface on the magnetic blocks is a pretty cool idea.

I have a Henckels wood block, with knives stored on their sides. If I had a
block where knives had to be stored vertically, I would store them on their
backs (as you suggest), but storing them on their sides also avoids dulling
the blades.

I have a side one too. I prefer the vertical, it seems a more natural way
to grasp the handle. Use them both. I use the side delivery one for seldom
used knives.

I've got one similar to the 14 slot holder that fits in the knife drawer.
Larger knives and carving fork fits in the lowers slots and smaller knives
on the higher slots between them. Fits all my knifes except the cleaver and
the steel. It Makes for a much safer drawer.

They only get me when I take them out. :-)

Mine are show here about the right middle of the page as Joe C.

I got mine in cherry wood and are 2" wide x 1" thick x 12" long so I could
mount them on my cabinets. There are some heavy knives on their in the
picture too. The magnets in it are very strong and hold really well. I've
had it up now about 3 years and never had a knife slip off or even get
bumped off. They match my 3 cutting boards also all cherry wood as well as
my knife blocks.

I have one for small knives inside the cabinet over my prep area. I keep
my knives in a block.

Tuesday Morning has some good deals on blocks.

Here is how we set up our knife drawer

Two flat knife blocks next to each other. Most of the knives with the
black handles are Henckles and the most used ones are on the right. (We
bought the knife blocks at a kitchen specialty store, but they aren't
hard to find.)

The second picture shows the knives laid out on the counter:

Most of the Henckels knives are over 20 years old and the second from
the right is over 30 years old. The others are knives we picked up
along the way and some have sentimental value but aren't used much.

As you can tell, we aren't big into owning a lot of knives. The ones we
have are good quality and more than adequate for the kind of cooking we do.

My knives are not in a drawer, Steve. I have an old Chicago Cutlery
holder (not a counter block) that was designed to mount on the end of a
cabinet or on a wall for vertical placement of the knives. I don't use
it that way, though. Mine is mounted under the hanging cabinet, right
next to my kitchen sink, for horizontal storage of my knives.

I just took a bunch of pictures and quickly published them on my
website, http://web.me.com/barbschaller. There, click on Photos on the
menu bar and you'll see them at the beginning of the lot. Just double
click on any one for a better view.

I love the holder * I had it restained to match the cupboard when we
redid the kitchen 16 years ago. It is very convenient to put the knives
away immediately after using them (mostly). A quick wash with hot soapy
water, rinse, dry, and put them in the slot. I've doubled up in a
couple slots; not the best idea, but what I have to do in the absence of
another holder like this one.

June Oshiro saw something like this and made one * a couple years ago
she was back here asking if anyone knew where she could get a shipload
of bamboo skewers for not a lot of money. She commissioned a woodworker
friend to build the box for her from some fancy schmancy wood. I've
seen hers and used hers and it's very cool. And I still like my own
(horizontal storage of the blade) better ‹ but take a look at this: :-)

I can't imagine having to open a drawer every time I want a knife and every
time I put one away. It seems clumsy. Knives are tools that should be
readily available for use and again should be easy to put away promptly when
finished.

I love mine too Cheryl and it comes with great hardware to mount it. The
magnets are very strong so be prepared for that.
