Default Carrot Orange Soup


Tonight I made carrot orange soup.
I used carrots of course; onion, ginger, chicken broth, butter and a
bay leaf. Pretend the butter and bay leaf are in the photo.

I started the onions cooking in the butter.

Then the carrots salt and pepper were added.

Then enough chicken broth to cover the carrots,

and a bay leaf.

Brought it to a boil then turned the heat down and simmered until the
carrots were fork tender.
Then using a stick blender started to puree the carrots. Be sure and
take the bay leaf out first.

Pureed until smooth.

Then I added the juice of one orange and ginger.

I've never thought of having carrot *soup*........ juice maybe, with orange
and ginger added.

Take your favourite juice combination and turn it into a soup?? :-)
