![]() Tonight I made carrot orange soup. I used carrots of course; onion, ginger, chicken broth, butter and a bay leaf. Pretend the butter and bay leaf are in the photo. http://i49.tinypic.com/23v11j6.jpg I started the onions cooking in the butter. http://i46.tinypic.com/142vk3o.jpg Then the carrots salt and pepper were added. http://i46.tinypic.com/vy367s.jpg Then enough chicken broth to cover the carrots, http://i48.tinypic.com/2mxk5qp.jpg and a bay leaf. http://i47.tinypic.com/so2tci.jpg Brought it to a boil then turned the heat down and simmered until the carrots were fork tender. Then using a stick blender started to puree the carrots. Be sure and take the bay leaf out first. http://i49.tinypic.com/nwhmir.jpg Pureed until smooth. http://i50.tinypic.com/2lazvhk.jpg Then I added the juice of one orange and ginger. http://i50.tinypic.com/2eqfj9w.jpg Dinner is served. http://i45.tinypic.com/nwlb9g.jpg Delicious. http://i48.tinypic.com/6t1or9.jpg I'm going to have a great lunch tomorrow. koko -- There is no love more sincere than the love of food George Bernard Shaw www.kokoscorner.typepad.com updated 01/01/10 |

I've never thought of having carrot *soup*........ juice maybe, with orange and ginger added. Take your favourite juice combination and turn it into a soup?? :-) -- Peter Lucas Brisbane Australia If we are not meant to eat animals, why are they made of meat? |
