Hi All,
Well, in the cold, hard light of day after all that occured yesterday, it has basically come to this - the Trolls either need to highlight the evidence that Stephen Kramer was deported from Thailand (the exotic locale of Chiang Mai in this case) or, forever hold your peace and never mention the words Stephen Kramer AND deportation ever again on any of the forum boards! Now, Takin has mentioned several TIMES that there is significant evidence on Stephen's supposed 'deportation' from Thailand (where I might add he ran a very successful photographic/multimedia business FOR many years). I have just for the past hour over a pot of steaming coffee searched through the location Takin advised (in this case Thai Visa - where Stephen is A very well respected member). Alas, using THE search terms Takin suggested there IS not a scerrick of evidence or otherwise that actually states Stephen was ever in any type of trouble in Thailand that resulted in him being deported from the Kingdom. So, my request is - Takin, Larb, Fred or anyone else who wants TO make a fool of themselves, please provide an actual link to the posts you mention which you state can be found on Thai Visa which actually says anything about Stephen being deported from Thailand!! I/We enthusiastically await your replies at the earliest possible convenie ZZZzzzzz *grin* Kind Regards, Brian |

Apparently there have been no problems for those accessing the Thai Visa server via the LOS, but for those like yourself outside the country in particular those from Oz there have been major problems which result in them being unable to do a proper search and in most cases getting a standard '450/55/NRF/ayrww34-884EFYY/877/DANNI' (Sorry, database unable to respond to your request, please try again later) error message. Jerry (the IT technician) asked me to pass on his apologies and said that things should be back to normal by Friday of next week at the latest, so I suggest you wait till then before you try further searches. Hi, So in other words Takin, you are pretty much confirming there IS no evidence on Thai Visa which would back-up your accusation that Stephen was deported from Thailand. Nice try son (your waffle about the server being down from outside LOS - I'm sure though that an issue such as that would not stop YOU from posting a link to the information for the benefit of people in Thailand to view anyway), but until we see that actual link to the information you claim is visible to you/and other people in Thailand on Thai Visa, we can only assume you ARE just 'takin' the ****....again. Good Evening/Day Fellow Forum Board Posters, Well, where do I start? I am so excited about everything at the moment, I hardly know where to begin heh. Firstly, it is only a matter of weeks before my big adventure throughout Thailand begins, and I am counting down the days till departure. Secondly, I have just come back from a day of birding. It was not the best day in terms of the multitude of species I was able to view, but just being out there alone in the wilderness, well it just gives me so much of a natural high. Hiding there in the brush, with adrenaline pumping through my veins, the feeling is very difficult to describe. Well I guess that is why I love it so much. Finally, I have had so much support in regard to the Online series currently being posted on the forum board. There were 3 more emails in my Inbox when I got home thanking me, as well as trying to get a 'sneak preview' on which bird species may be discussed over the coming weeks. As I mentioned in my email response 'Craig and Meaghan', you are just going to have to wait heh. But thanks again ever so much for your support. Well anyway, without further adue, let's get into tonight's featured bird. The Fluffy-Backed Tit-Babbler is found mainly in freshwater swamp forests, and in locations such as Pa Phru in Narathiwat Province. Known by its rather unusual scientific name, which is Macronous Macronous ptilosus, the Fluffy-Backed Tit-Babblers are quite varied in size and color, but are recognised by their soft, fluffy plumage. They can sometimes also be found in scrub forest. The south of Thailand is the best location to view this species, for example in Hala Bala. Ah well, hopefully they won't mind a simple recipe (grin). I've kill filed the obvious abusers but not the apparently innocent stray folks. I like this one particularily well on pork loin sliced to about 3/4-1 inch thick 'steaks' (3 in our case as that's how many we feed a night here). -1/4 cup soy sauce (I use Datu Puti brand, Philippines) -1/4 TS 'Patis' (Tiparos brand from Thailand best) -1/4 cup 'Bannana sauce' (Jufran brand) or 'Thai hot sweet chicken sauce' (Prefer flying duck brand from China) - Optional but normally added, 2 cloves minced/crushed garlic Marinate as long as 8 hours in the fridge but can be as little as 30 mins. Cook the meat in a heavy (cast iron preferred) pan with the marinade for 4-5 mins per side then turn heat off and let it 'rest' as you fix the rest of dinner. Slice across the grain into long thinnish strips to serve. Should be pinkish red still at the center for our tastes. |

It can be used as a marinade, dipping sauce, gravy (thickened if desired) braising liquid or cooking sauce. For the basic marinade combine equal portions of dark sesame oil, soy sauce and sake. Mix well and allow meat to marinate at least 1/2 hour. Over night or 24 hours is even better. Use this on cut up, boneless chicken thighs after poking them all over with a fork so the marinade seeps into the chicken thighs, then, either saute in hot oil or dip in a batter and deep fry. It is not uncommon to add crushed garlic, ginger, Chinese 5 spices, hot pepper, green onions or shallots, mushrooms etc. Plum sauce, black bean paste & etc. may be added but watch out for salt content when combining Chinese condiments or ingredients with soy sauce which is already very salty. After marinating the meat and when having finished cooking it, use the leftover marinade to 'deglaze' the pan the meat was cooked in, scrape up any browned bits to incorporate into the marinade and heat through and gently reduce, adjust seasonings to taste and serve as a sauce with the meat. With the skirt steak one could brown the meat in a skillet in hot oil on top of the stove and then add the leftover marinade to cover and sit (covered) in a low oven (325 - 350F) to braise till done. This is a very good way to achieve fork tender beef but a careful watch has to be kept on the level of braising liquid to make sure it do not totally evaporate, have extra on hand to add as needed. Of course if one want to add slices of carrots, potatoes, artichoke hearts, olives, mushrooms, turnips etc. to the braising liquid or caramelize with the meat that can make for a very nice sauce. Which can be filtered and the over cooked veggies pressed and then thrown away or replaced with fresh veggies cooked in the remaining sauce for 5 - 10 minutes. -- Mr. Joseph Littleshoes Esq.
