Applesauce on the stove is one of the first things I learned to cook.
It is very simple and pretty fast--less than 30 minutes. It teaches
you the advantage of tasting several times as you go along to get the
sugar and cinammon just right (and lemon, if you use it). And it lets
you mash to the consistency that you like. When you are finished you
can immediately enjoy the effects of the decisions you made. Why
trade that for some mindless, hours-long process? -aem

Concerning speed, have you ever made applesauce in a microwave? I can
make very good baked apples in a few minutes in a microwave and the
apple pulp is soft and looks like it would only require mashing for
apple sauce.

For the record, I stuff the cored apples with raisins, brown sugar and a
little nutmeg.
