A few weeks back we discussed the nasty maple flavored bacon and lingering
odors. Last week I went to Whole Foods and bought some real maple smoked bacon. Huge difference in quality (and price). This was more like regular bacon, but with a pleasant maple smoked flavor instead of the more traditional hickory. No strong odors, it was good eating. I also bought some of the Black Forrest bacon. We've enjoyed that in the past to. Both were $6.99 a pound. While more expensive that the everyday packaged stuff around, it is a better quality, leaner, better tasting. Ed |

If you smoke it with maple you get maple smoke flavour. In my experience, maple smoke does not taste much like maple sugar/syrup. |

Maple smoked bacon and maple flavored bacon are clearly two different items. One is smoke flavor, the other is _maple sugar_ flavoring. You won't win this one, Ed. It is occasionally possible to find it in a grocery store on sale for less, and that is the mass produced commercial crap that is useally mostly fat and pumped full of solutions so you are paying bacon prices for a saline solution. When I used to buy bacon in the grocery store I had to sort through dozens of packages to find on with a nice combination of fat and lean. With this guy, every package is acceptable. It shrinks a little in the frying pan but that is just from the fat rendering, not from evaporation. |

I do better than that. I am a steady customer and I have sent a number of my friends and relatives to him. They also loved the bacon and now by their bacon exclusively from him. |
