They are not interchangeable in recipes. Evaporated is milk that has had some of the water boiled out of it. It tastes like cooked milk. Carnation, Borden, or store branded. Condensed is very thick and has sugar added; it's quite sweet. Eagle or Nestle, a few Mexican brands or store branded. If you condense it even further it makes a sweet caramel syrup called "cajeta" in Spanish. It's one of the ingredients in the "Tres Leches" Mexican cake. gloria p |

I have made it a few times by boiling the whole can in a large kettle for a couple of hours, not emptying the can into a pan as was recently mentioned here. gloria p |

Vietnamese coffee is often made with sweetened condensed milk, and served hot or cold. Usually, I take my coffee black, or with just a tiny bit of sugar.
