I made grown up chili for my son's school's "chili cook off." He
comes home from school today to inform me that only the kids will be voting. Of course, some kids eat some pretty hot stuff these days. Lots of red chilies in there, cumin, black pepper, salt, a little garlic, lean bottom round fried in rendered beef fat, and long, slow simmered with red kidney beans. No tomato, no onion. If I'd have known only the kids were voting, I'd have used a few less chiles, but I really wasn't so much trying to win as to make something yummy. --Bryan |

I cut the roast (maybe 2 pounds) into 1/2-3/4cm cubes and browned it thoroughly. Then I browned three green jalapenos and three red jalapenos which were de- seeded and de-veined, and chopped. I added this, with some water, about two or three tablespoons of Penzey's ground cumin, one pressed garlic clove and about a teaspoon of ground tellicherry to a crockpot on high for about an hour, then turned on warm overnight. I soaked the kidney beans overnight, then added them with more water in the morning. I upped the heat to low for a few hours, then back to warm all day. I put less much cumin in that, and that pretty much always gets beans. The kids ate it happily. I could have--and wished I had--put even more chilies in it, though the one thing that really would have improved it was more salt. I'm used to making stuff under-salted (because my wife likes things less salty than most folks do) then adding salt, but there was no salt to add at the place I went to. > > Becca --Bryan |

You might like mangoes and guavas too, which is what habaneros kind of taste like to me.
