Hmmm. Meatless?

Pasta with artichoke hearts with fresh roma tomatoes & capers etc.
Salad - traditional
Garlic bread made with fresh home made herb garlic sourdough.

Mushroom Medley Soup

INGREDIENTS:
1 cup Shitake mushrooms, rough chopped
1 cup Button mushrooms, rough chopped
1 cup Oyster mushrooms, rough chopped
1 cup Crimini mushrooms, rough chopped
1 cup Enoki mushrooms, rough chopped
1 cup Bunashimeji mushrooms, rough chopped
1 cup Hiratake mushrooms, rough chopped
1 med. onion, white, diced
3 cups chicken broth
1 clove garlic, crushed (variable amount)
4 TBS. whole peppercorns
Salt to taste; kosher
1 cup lentels, red
2 cups Tofu (firm)

METHOD:
Put onions, peppercorns, garlic and lentels in bottom of crockpot.
Clean and cut mushrooms, layering each mushroom in crockpot. Add in
chicken broth. Set on high for 5 hours or low for 8-10 hours. Last 30
minutes of cooking, slice tofu into strips and add into soup. Stir
about and serve with crusty Italian bread and a non-oaky Chardonnay.

I missed this comment earlier but mostly yes; Clan Ranger dines mostly-
meatless on Ash Wednesday; old habits and all that.

Thank you. It's a favorite dish with the daughter-units and all their
assorted friends. I can certainly cook it up quicker by laboring over
the stove and cutting the cooking time down to an hour but the
crockpot is the best tool for me and mine.

Default Ash Wednesday


Keep the old fast. One full meal a day. Two lesser meals not to equal a
full meal. Meat once a day except on Friday and Ash Wednesday no meat.
Liquors any time. Sundays are wonderful to eat.

Not Catholic either and I fixed country fried steak and gravy to take
to work tomorrow for lunches this week. Early supper/late lunch was
leftover beef roast with pearl onions and smashed taters.

Sounds good to me, saved!
I think I might add sliced portabello and maybe some porcini, but that's
about it.
