Default Cannellini Bean, Italian Sausage and Spinach Soup


I had intended to add penne to this but hubby started eating the soup
and I never got around to it.

Cannellini Bean, Spinach and Italian Sausage Soup
by: sf

12 oz. dried cannellini beans (or two cans)
1/2 pound fresh or frozen spinach, chopped
8 oz. bulk/loose hot or mild Italian sausage, browned
1 small onion, chopped
1 tsp. finely minced fresh garlic
1 can diced or crushed tomatoes or 2 large, fresh tomatoes diced
1 can beef broth or 2 C home made beef stock
1 tsp. dried oregano
1/4 tsp. ground pepper
10 cups water
1/2 cup dried penne, cooked al dente and drained
shredded Parmesan or Romano cheese for garnish

Directions:

Soak the beans over night, drain. Place beans in a 6-quart saucepan,
cover generously with water and bring to a boil. Reduce the heat and
simmer for at least 10 minutes, drain. Return the beans back to the
pan.

Saute the sausage until browned, add to beans. Saute the onion until
almost translucent, add the garlic and stir. Add to beans.

Add the beef broth, tomatoes, oregano, pepper and water to the bean
mixture.

Bring mixture to a boil and immediately lower the heat to simmer. The
liquid will gently bubble at the edge. The beans should be tender in
an hour. Cover and continue cooking until the soup is as thick as you
wish. I cooked it for another 2 or 3 hours on the lowest setting
because I like it thick and I'd started it way too early in the day
anyway.

Add the spinach and pasta. Bring back to a gentle simmer and cook for
another 5 minutes. Ladle into bowls and garnish with cheese.

Serve

Sounds GREAT. I would leave out the penne, too. Beans and sausage and
tomatoes, mmm. And spinach.

That, and a long history of kale/white-bean soup with some
sausage.

Spinach is fine... just add it at the very end.

What's wrong with that? That's what real cooking is all about. Find a
simple recipe that sounds appealing and use the idea as a base for what
you have on hand.

Or are you really that ignorant?

exactly? I almost never do...

Usually, If I'm going to try a new recipe that comes highly
recommended, I'll follow the recipe the first time. After that, I'll
tweak it according to what I think makes it "better". I figure you
need a starting point from which to make comparisons.

Substitute any white bean for the Cannellini. Next time I may use
small white beans instead.

Add some salt too. I'd start with 1/4 tsp and work up from there.
Hubby liked it as is, I thought it needed just a leelte bit more than
what came via the sausage and canned items.

TY, that's part of my new set of dishes. They will star in my food
pix from now on. It was hand held and if I actually read the
directions, I might even figure out how to use the flash as fill in
lighting. I didn't have a problem with that picture because I took it
in the middle of the day, but I did have problems with the pictures I
took last night which will be posted in another thread.

Avoid flash if you can. It drastically flattens pics. Lighting from the
side and shooting the dish from a front angle will also make a
difference. Makes for nice 3-D shadows. :-)

I, too, have purchased dishes strictly for food photography. Look at my
Thanksgiving series. I bought two of those plates for that purpose only.
Plates are inexpensive. I paid $3.00 each for them.

I drive a Chevy S-10 and have never been outside of the US except for
Canada and Mexico.

Where the hell do YOU of all people get off calling sf "pretentious" for
that Mr. Gourmet eater?

Geez!

Obviously, we've had a misunderstanding. My post was not meant seriously.
I'm just juxtaposing blake's representation of teachers' standard of living
against the trappings of wealth about which you've posted here. I'm not
aware of any other schoolteachers here (except maybe Jude; I'm not sure if
that's what she's doing these days).

I apologize for the way I made you feel. Given the way you lashed out in a
misinformed and ineffectual attempt to hurt me, I assume you were badly
wounded by what I wrote, and I had no intention to hurt you.

No, the "me" character is someone else. I'm only aware of few people who

It was a joke. I was making light of having new dishes and the truth
is they are what you're going to see in my food pix from now on. I
didn't go out and buy one or two special dishes for food pix only.

Why?

I don't have space for a new set of dishes and occasionally find ones
that I consider to be visually appealing, and since I cook for two, I
buy two of them with consideration that they'd be good for photography.

What is phony/pretentious about that? It's ART. Food photography is more
difficult than some people think and I find it to be a challenge.

I store said dishes in a separate cabinet from my daily use stuff.

And sometimes I use the blue plastic ones for photography as well. <g>

I, too, read it a couple of times and was pretty perplexed. Still, I
know I've made lots of posts that didn't read the way I had intended
them to. It's a hazard of the medium.

I'm sure there are others but they don't come to mind. Tara started a
