Default Leftover Rules

These are out of the latest Nutrition Action.

2 Hours -- 2 Inches -- 4 Days

2 hours from oven to fridge -
Refrigerate or freeze leftovers within 2 hours of cooking.

2 inches thickto cool it quick.
Store food at a shallow depth - about 2 inches - to speed chilling.

4 days in the fridge - otherwise, freeze it.
Use leftovers from fridge within 4 days. Exception: stuffing and
gravy 2 days.
Reheat solid leftovers to 165 F. and liquid leftovers to a rolling
boil. Toss what you don't finish.

This is a bit overstated. In fact, it's limited to two hours
within a certain temperature zone - 40 F - 140 F

The clock doesn't start when the food comes out of the
oven. It starts when the temp goes below 140 F.

This is an important point which many people don't
take into account. The food should have a small cross sectional
area so it chills quickly.

<lol> That's too funny, just because it's so true!
I totally understand what you mean. :-)

One good example is that I frequently end up thawing my turkeys at room
temp until they are just cold and slightly "crispy" with ice. That
generally takes about 36 hours...

Been doing that for years.

The human body is designed to accommodate and conquer a lot. Modern
day health department rules were written because
of lawsuits more than actual safety.

Don't get me wrong, there's nothing wrong with following health
department guidlines. You are safer if you do. Just don't get
paranoid about it. If you are a healthy human being you'd be
surprised what your body can handle.

But then agan, everyone is different ....what would not even phase one
might make another quite sick. You just have to
find out for yourself.
