This is the spice blend that started it all.
2 1/2 tablespoons paprika 2 tablespoons salt 2 tablespoons garlic powder 1 tablespoon black pepper 1 tablespoon onion powder 1 tablespoon cayenne pepper 1 tablespoon dried oregano 1 tablespoon dried thyme Combine all ingredients thoroughly. |

My favorite is Tony Chachere, who has been making his spice blend since around 1970, it has less salt than Zatarain's. How old was Emeril in 1970? He was 11 yo. Becca |

Just one of many spice blends like Zatarans, Old Bay, Fiesta brand.... Just did a short cruise to the Bahamas and everyone with me ate conch fritters for the first time. They said they were a tad heavy yet spiced nicely. Then arrived home last night to rush to a dinner meeting held and catered at a church. They served some sort of corn muffin seasoned with...sage or something? Horrible. Blech. Just really badly seasoned! |
