Can duck fat be used in a commercial deep fryer and if so where can it
be purchased in quantity?

I think duck fat breaks down readily if heated to near the deep frying
temps. I've used it for cooking confit of duck. You cook the confit in the
duck fat with a very slight ebullation of the surface fat. The duck and some
of the fat goes into the cassoulet after if that's what you're making. .
I've seen duck fat in at a local restaurant supply house. It's a bit pricey.

High end food stores like Balducci usually have it in quart or larger tubes.

It can and is used when making wonderful French fries. Not sure who can
provide in bulk.

At about $30/lb or more.

To get any quantity of duck or goose fat, you need to know the mob.
