Default Scarlett O'Hara Bread

With all the discussion of Irish Soda Bread I came to realize that Irish
Soda Bread has much in common with Southern Corn Bread--the basic
ingredients are milled grain, buttermilk, baking soda, and optionally a
little salt, traditionally it's baked in an iron pot, and there is much
controversy surrounding its proper preparation.

So, just for hohos I took my basic corn bread recipe and substituted
flour for corn meal and lo and behold it came out a nice dough. However
I had the iron skillet already preheated so I added a bit of water to
thin it to a batter.

Turned out pretty good.

Recipe, for 10" skillet, preheat oven to 425, with clean empty cast iron
skillet inside. Meanwhile, mix batter of 1/2 cup all purpose flour,
1-1/2 cups whole wheat flour, 2-1/2 cups buttermilk, 1-1/4 teaspoon
baking soda, and salt to taste. Melt some butter in the skillet, pour
in the batter, bake for 25 minutes, turn it out onto a rack.

Cutting the liquid down to 2 cups will I think make a nice dough.

I'm christening it "Scarlett O'Hara Bread"--Irish soda bread baked
Southern style.
