Default substitute for gruyere or swiss

What is a good substitute for these cheeses in a savoury bread pudding.
I have havarti, cheddar and mozzarella...thanks...Sharon

Although none of those is a *substitute*, any of them would work in a savory
bread pudding. Mozzarella would probably be the least successful due to its
texture when melted and relative lack of flavor.

Mozzarella is too mild, IMO, for that. Either of the others should be good
but havarti is closer in flavor to gruyere. You can even use both if you
don't have enough of one.

If they're nice cheeses blending them (like stupidmarket deli
cheeseball made from scraps) is a waste of perfectly good cheese...
choose just one or make separate bread puddings each with one cheese.
I don't think mozz will work well with bread budding, too stringy. In
fact I'd not use whole cheese, I'd make a cheese sauce for a savoury
bread pudding... havarti is too mild for savoury, use chedder, edam,
gouda.... a smoked version works well with savoury.

Thanks...I'll use the havarti. It's a new recipe and I'm not familiar
with the different properties of gruyere or swiss since I haven't used
them.....Sharon

You can't go to the grocery store first? I don't think either one is
a good substitute. I don't like the flavor of gruyere/swiss (too
sharp for me)... so my go to substitute is Jarlsberg. It's mellower,
but still has a nutty flavor, and melts the same. Havarti is a
completely different flavor IMO, as is Cheddar and I definitely would
not use mozzarella.

I always wondered why all cheese was not sharp or super sharp. Now I know

It's not a matter of "can't" go to the grocery store, but that I don't
want to make a 20mi round trip for a hunk of cheese..lol.. I found a recipe
that calls for cheddar. I'll get jarlsberg anaother time...thanks for the

Breaded pork cutlets. I blanched some asparagus and used tarragon and
chopped fresh chives ( my rosemary plant is too small to start harvesting)
in it. I ended up using the havarti and hope it's seasoned well enough. I
had forgotten to get the cheddar out of the freezer... I will post how it
turns out. It's ready for the oven and we eat in an hour. DH is a willing
guinea pig... ......Sharon

Well, after all the questions I had, the dish turned out really good in
spite of the substitutions. It called for whipping cream and milk, which I
substituted with evap. milk, croissants, which I used a poppyseed baguette,
aged cheddar and I used havarti, sprigs of fresh rosemary, but I used
fresh chives and dried tarragon. It was an Anthony Sedlak recipe meant for
Christmas, using dried cranberries, but I used the blanched asparagus cut in
1 inch pieces. So, after all is said and done it was a completely different
recipe...lol... I'm pleased with the outcome, especially since I'm not much
of a "seat of the pants" cook. ....Sharon
