In fried rice you're using (or should be using) stir fried 'shrooms
(frying firms texture and concentrates/enhances flavor by removing
water), but in soups and stews there is no difference whatsover with
canned button 'shooms or fresh button 'shrooms... in fact canned
button 'shrooms are typically much better quality than what's usually
available so-called fresh. When comparing one must take into account
usage and type of 'shooms... with soups and stews dehy 'shrooms are
FAR superior to canned or fresh. Making a blanket statement all
canned 'shrooms suck indicates cooking ignorance... some fungi are
only available canned (straw 'shrooms).
