This is a nice pretty snack to create with hard boiled eggs:

When I first posted this, several people tried it and liked it, and a few added the beet chunks to the pickling solution too. I don't care much for beets but dad loves them, but he does not like pickles or vinegar, so he gets the benefit of getting to eat the beets as is and I just re-use the juice. <g> That brine can be used twice, but that's about it. -- Peace! When I was a young fellow in the Navy every bar had pickled eggs and pickled sausage in jars on the bar, usually were either free or a nickel a piece. |
