Default Dinner last night Sun 28Mar10

Finally cooked the roast beef.

Did it to medium well on the internal thermometer, and it was *just* right.

Had some roast veges going... and at the time the pic was taken, the potatos
were in some boiling water, prior to getting 'fluffed'.


All veges roasted in duck fat....... and *damn*!! I love the taste of potatos
roasted in duck fat!!

Certainly is!!

I've seen commercial sized tins on TV, and always keep my eyes peeled for
them whenever I venture to a deli region.


I take it you can't buy duck fat in your area?

Can you buy/order confit de canard....... tins of duck legs in confit.

I'm pretty limited in my duck spectrum. I want my duck breasts very
rare (ugh to over cooked) and the legs as confit. They don't sell
duck fat by the pint here anyway. So to make confit I have to render
and save chicken fat (they don't sell that by the pint either) to add
to the rendered duck fat. I'm also very limited as far as the duck
itself. I do *not* like wild duck, only farmed and the farms are
limited too.

Oh well.......... my duck fascination/education started with wild duck.

Farmed ducks are great, but they lack the real flavour of the wild duck.
