I like rustic dishes like this. I'm not a fan of cats on the counters or tables where food is prepared or served... but hey, it's your house, your rules. Between the talk about Rice and Chicken and Paella, we have been kicking around making a dish. We have smoked sausage, shrimp, chicken rice, maybe some vermicelli, chicken stock, onions, etc. I'm not sure about adding some chopped tomatoes or maybe some beans...... and haven't decided how spicy I want it to be. Some afternoon when we have time we'll kick it around the kitchen a few times and see what happens. George L |

I have two kittehs, both shelter cats, and the youngest (female) is Maine Coon (mostly I figure) and she has that undercoat that, if I'm not constantly after it, gets EVERYWHERE. I've never had a cat that "puffed" hair as she walks before, but this one does. It's so fine it drifts in the air and lands everywhere. And, anyone who thinks they've "trained" the cats not to be on the counters or tables is kidding themselves. They get up there when you aren't around to see...trust me. If you are going to have cats indoors you learn to deal with it. |

Seriously, the cats do NOT get up on the counters or stove top. They do, however, get on the table. I've not been able to break them of that so I just change the table cover frequently... -- Peace! I hope the recipe has been posted. I don't have an exact recipe, I make it a little different each time, but generally it's a roasting chicken cut into eighths, seasoned and fried. Remove from pan and add some liquid to deglaze (this time I used a white box wine). Sweat an onion and some garlic, add two cups rice, a can of drained black beans, some more seasoning (Goya sazon w/achiote), a scant 4 cups water. Cover, bring to boil, a quick stir, cover and turn heat to very low. After 20 minutes turn off heat and let sit 20 minutes without peeking. >Sweet cat pics too! Took these today...
