Default Easter "dinner" (more like brunch) with pics

Just was not motivated. I ended up making BLT spring rolls instead of
doing anything elaborate. When you cook and eat as little bacon as we
do, sometimes there is no sin in purchasing the pre-cooked stuff. It is
remarkably good. Crispy and perfectly done, perfect for sandwiches or
for these. The rice wrappers are not carb free by any stretch of the
imagination, but they are a bit lower than bread. :-)

Thanks! They were. You could not see the 1/2 Tbs. of lime based mayo in
those, but it was there and added it's unique flavor... :-d

Looks very good. However, I would reduce the amount of lettuce, add
some cucumbers and/or red onions, and add a bit of some sauce (say,
yogurt-based like for gyros/donner-kebab), because it looks a little
dry.

I'm a purist when it comes to that combo.

And it was anything but dry....

I do like the cucumber suggestion however.
