I think they're OK but the wife and kids act like it's Christmas morning when I make it. It's rather embarrassing. :-) I got my recipe from the newspaper and it recommended that cast iron pans be avoided so I just stick with my non-stick fry pan. The eggs and milk are mixed with a whisk, not in a blender. The flour is whisked in for a short time - just enough to break up most of the lumps. I try to avoid incorporating air into the mix. Looks like you're going in the opposite direction. OTOH, there's no denying that your pancake sure looks tasty! Perhaps I should change my evil ways or, at least, my evil prep. :-) > > >> Dutch Baby Pancakes >> >> 4 eggs >> 5 tablespoons butter >> 1 cup milk >> 1 cup flour >> 1/2 teaspoon vanilla extract >> Dash of salt >> >> Preheat oven to 425 degrees. >> >> Put the butter in a large cast iron skillet and place in the oven to >> melt the butter and to heat the pan. >> >> Put eggs into a blender and mix on high for 1 minute (I use a stick >> blender).
