Default Ahhhhhhhh, fish tonight .......

Grilled rainbow trout in a basket again tonight. Got a nice 18" trout in
the freezer. Time to go fishing and build up the supply. Going to try some
of the rosemary Omelet suggested, although I have no fresh stuff. Soon, it
will be planting time, and I shall have one resident rosemary plant that
should provide enough for any need.

Hey Steve,

Wow an 18" trout! They wouldn't come too much bigger than that I
wouldn't have thought - well maybe in a farmed environment but not in
the wild at least. Please correct me if I am wrong though - don't get
too many trout where I live, just darn river catfish! They DO taste ok
when they are young and eaten whole, but if they are an older fish and
need filleting, the muddy taste is a bit too much for my liking.

I recently found fresh frozen catfish fillets for $2.00 per lb. Tilapia,
only $3.00 per lb.

I live about ten miles from a nice trout lake in southern Utah. They also
have largemouth bass and crappie. But the trout are very nice sized, and I
have some good holes GPS'd. The size for trophy trout in the local trophy
lakes that are size restricted are 18-20" MINIMUM. Our little lake is not a
trophy lake.

I lived in Southern Louisiana for six years or so. I became very familiar
with catfish. If catfish come from flowing water, even if it is muddy, they
do not have the mud flavor. And even if pond raised, they do not have the
muddy flavor. Almost all catfish sold in markets is pond raised, so there
must be something different in the soils used in the ponds.

The catfish we caught in the muddy Atchafalaya River area were great
tasting, but the water was flowing. The catfish we caught from the
backwater bayous and sloughs that had water go in and out of them with
rising and falling water, but no flowing water, had the muddy taste.

Species has a lot to do with catfish taste, too. The most common for
restaurant and market use are channel catfish. Which, even though they are
raised in a pond, were original channel dwellers in their ancestry.

Hey. How you been? I have settled on the tilapia that come in individually
frozen fillets. You can pull out one or three, and they are consistent in
size and flavor. Good with some sautéed crabmeat and shrimp on top.

Quail Creek, Minersville, Kolob Reservoir, Navajo Lake, Panguitch Lake,
Otter Creek Reservoir, and lots of streams in the Sevier River system.

Southern Utah, basically.

Considering you can get rainbows in the wild up to 20 lbs

Here in the west, native trout are a rarity due to minimal natural spawning.
Almost all trout are hatchery raised, and planted when they are 8" to 12"
long. The habitat is bigger, too. Trout in lakes will grow bigger than
trout in streams depending on the species. German browns can attain large
sizes in small streams. Freezing weather, normal water temperatures, and
short summers also affect trout in cold stream areas. Here in our area,
crawfish are common in the lakes, and a good source of food to rapidly
fatten up the fish. I shall take some pictures of my next catch and post on
flickr.

I am having trout too. I picked up two nice sized fillets at the
butcher shop. I am have dredged them in seasoned flour and am waiting
for my wife to finish making salads. I am going to fry them in butter
and add some lemon juice and parsley to finish them off.

Last night, I picket up the first Alaska Halibut I've gotten
this season. ($19/lb, but that's better than the $28/lb
being asked for the Alaskan king salmon.)

I pan fried it with a buttermilk-lemon extract-flour batter,
using a mix of olive and canola oils. Yum!

No they aren't and we wouldn't buy either one Cannot imagine using
lemon extract on such an expensive piece of fish. Fresh lemon is cheaper
and tastier.

For 7 summers I worked as a fishing guide in Canada's Arctic (65
degrees and further North). I woke up every day hungry and never
wanted to eat yesterday's fish (always bacon but never yesterday's
fish). We always tried to catch one right before we hit shore for
lunch so that it would be as fresh as possible. I love shore lunch and
fish for dinner is good food but anyone who touts trout for breakfast
has his head up his ass. Fish for breakfast? Who is waking up and
catching that for you?

I used to have a boss who lived for fishing. He used to go back up to
his home town in northern Ontario to go fishing with his friends and
they would charter a plane to take them out in to remote lakes. he said
they used to get up and hit the water first thing every morning. The
first trout they caught went right into the smoker and then next ones
were for breakfast.

Have you tried it?

Of course we served it with fresh lemon. However, it is
not the same as including lemon extract in the batter, which
so far has received high marks from everyone.

Lemon extract contains real lemon.

(Perhaps there is such a thing as imitation lemon extract;
not sure. I have not seen it or used it.)

I love cold fish the next day. The meat is firm, and the coating has a
better than yesterday flavor. I used to live in Louisiana, and we caught
tons of fish. We also cooked tons of fish, crawfish, shrimp, and crabs in
the back yard. Sometimes up to 200# of live crawfish or 12 dozen blue crabs
for one family party.

Louisiana ......... I miss the fishing, the food, the music, and the people.

Hmmmmmm. Lemon extract in the batter. Sounds interesting, and tangy. I
would have never thought of that in a million years. What, exactly is lemon
extract? A powder? Liquid? Where do I get some? Sounds like it would be
useful in a lot of things.
