Default Simple Monday Night Dinner 4/26/10

Salmon patties and pureed butternut squash as a side dish.

Salmon patties recipe adapted from 'The Ultimate Gullah Cookbook':

1 can pink salmon, drained and flaked
1/2 small onion, finely chopped
1/2 small green pepper, finely chopped
1 clove minced garlic
1 Tbs. mayonnaise or sour cream
1 large egg, beaten
2-3 Tbs. flour
salt & pepper
dash cayenne pepper
1/4 c. vegetable oil for pan frying

Combine the flaked salmon with all other ingredients (except oil) in a large
mixing bowl. Form into patties. Let the patties set on waxed paper for a
bit. (Sprinkle with a little more flour if they seem too wet.) Heat the
oil in a skillet over medium burner and cook until both sides until golden
brown and salmon is heated through.

I served it with roasted then pureed butternut squash seasoned with salt &
pepper and a little tarragon. Not quite the recipe used for my signature
Butternut Squash soup, but close It makes for a nice side dish for fish
of any kind.
