I'm not too keen on pizza, but this definitely takes the cake, eh

It looks kind of odd but I bet it tastes good. I got hooked on bacon and
egg pizza. It's really good when the crust is crispy outside and soft
inside. I ate it so often it probably gave me diabetes. I'd recommend it
in moderation.

Look at the pizza on the cover! Peter Reinhardt is a pretty well-respected
cookbook author, and as you can see the book is given four-and-a-half stars
by the readers, so it's a pretty good cookbook.

What I find a bit weird is that the book doesn't have a *recipe* for that
pizza on the cover.

Now that's peculiar! If there's a photo of a food item on the cover of
a cookbook, I'd expect that recipe to be included. Poor job by the
editor(s)/publisher then IMO.

Once you have your dough, what to do with it? The standard topping

quite well. So: 1/2 cup tomato sauce or chopped canned tomatoes, 2-3
ounces thinly sliced ham, shredded, and an egg. Spread the tomato
sauce over the pizza, sprinkle the remaining ingredients over the
sauce, crack the egg over the middle of the pizza, drizzle with a few
drops olive oil and bake.

I'd try it if it was in front of me. The eggs in that picture look
beautiful. IMO that makes more sense than an egg on a burger. I've
decided not to bother trying a burger with an egg, at least not on a
bun. Down-thread Janet mentioned a spinach combo I'd take a stab at
but not with a tomato sauce. I love eggs no matter how they're
prepared. But (IMO) a delicious yolk needs nothing more than a piece
of toast for dipping. For me It must be a texture thing. I love to
make pepper, egg, sausage and cheese sandwiches. That's not to far
from pizza ingredients but no runny yolk. But as I said, I'd eat what
was in the picture you posted. Probably need a fork though. <g>

That one's interesting. But I still don't get it. It's a good thing

Hmm..I am working days that day...actually my first day of
orientation..

I saw that you had American Pie on your bookshelves. That pizza dough
is wonderful..at least the Neapolitan dough is. And it is great cause
it needs to be made at least a day before...

I wonder what is the best way to cook the egg? Putting it on top during
the regular pizza cooking might lead to a distinctly crisp egg. I
suppose a fried or poached egg could be added after cooking and just
possibly you could just break an egg on top after the pizza came out of
the oven and let the hot topping cook it some.

My plan for when I try it on Tuesday is to partially cook individual pizzas,
break an egg onto the top of each one, then return them to the oven to
finish cooking the pizza and egg at the same time. The original post in this
thread gives the timing I intend to follow.

James, at home I would poach the egg and add it after cooking, because the
pizzeria oven is so hot it is only in there 90 seconds or so. I think you
are not going to get predictable desirable results in an oven that doesn't
do that. I'd hate a solid yolk or runny white.
