I'm not too keen on pizza, but this definitely takes the cake, eh
<VBG>! How about an egg on top of that pizza, too?! Today here is an article in the food section of my local newspaper by J.M Hirsch, AP Food Editor, about "Egg can top off your pizza" and a photo. I googled using 'AP Food Editor J.M. Hirsch egg pizza' as the search string, and the following is just one of the many hits provided: http://www.sun-sentinel.com/features...,7157427.story or http://tinyurl.com/23lreaj Definitely interesting, although I'm not so sure I'd try it (?). Egg was Alice Waters' favorite pizza topping.

It's really good when the crust is crispy outside and soft inside. I ate it so often it probably gave me diabetes. I'd recommend it in moderation. Paul |

Peter Reinhardt is a pretty well-respected cookbook author, and as you can see the book is given four-and-a-half stars by the readers, so it's a pretty good cookbook. What I find a bit weird is that the book doesn't have a *recipe* for that pizza on the cover. Bob |

Stop calling these things "pizza" Absolutely! Just because eggs is a traditional pizza ingredient in Italy and the rest of the Europe, and because good American chefs use them as such, doesn't mean it's pizza! If it ain't a Domino Pizza or Pizza Hut topping - it ain't real pizza! Just my first cousin (and brother-in-law) Leroy! http://www.slowtrav.com/italy/restaurants/pizza.htm Pizza in Italy Most pizza menus have similar items, but you will find differences by region. In some regions, adding an egg to the top of the pizza is an option. http://www.whiteonricecouple.com/rec...-alla-bismark/ Pizza alla Bismark- with eggs We were catching up on some of the “No Reservations” and noticed when Bourdain was on the farm in New Jersey, they were making a pizza with fresh cracked egg on the top. That looked pretty damn tasty, so we embarked upon creating our home version. Simplicity seemed best for this little delicacy, so we took one of our homemade pizza crusts, sautéed up some thick-cut sweets onions, cracked a couple eggs on top, then glided it into a nice & hot oven. The results were scrumptious. The richness of the eggs were balanced nicely by the sweet onions, and the thin crisp crust was tasty as always. http://italianfood.about.com/library...y/aa021305.htm. Italian Pizza Toppings & More Once you have your dough, what to do with it? The standard topping combinations one encounters in Italy differ somewhat from those I have encountered elsewhere. The quantities given below will be sufficient for one pizza each. Pizza alla Bismark: What's that egg doing here? For reasons unknown to me a pizza with an egg cracked over it so it emerges from the oven sunny-side-up is called a Bismark. Excactly what else goes onto the pizza is up to the pizzaiolo, but ham goes quite well. So: 1/2 cup tomato sauce or chopped canned tomatoes, 2-3 ounces thinly sliced ham, shredded, and an egg. Spread the tomato sauce over the pizza, sprinkle the remaining ingredients over the sauce, crack the egg over the middle of the pizza, drizzle with a few drops olive oil and bake. |

Didja know that Bryan is a faggot name... were you a man you'd be Brian... well, not really... I've decided not to bother trying a burger with an egg, at least not on a bun. Down-thread Janet mentioned a spinach combo I'd take a stab at but not with a tomato sauce. I love eggs no matter how they're prepared. But (IMO) a delicious yolk needs nothing more than a piece of toast for dipping. For me It must be a texture thing. I love to make pepper, egg, sausage and cheese sandwiches. That's not to far from pizza ingredients but no runny yolk. But as I said, I'd eat what was in the picture you posted. Probably need a fork though. <g> Thanks for the good thread! Lou |

That pizza dough is wonderful..at least the Neapolitan dough is. And it is great cause it needs to be made at least a day before... Christine |

Putting it on top during the regular pizza cooking might lead to a distinctly crisp egg. I suppose a fried or poached egg could be added after cooking and just possibly you could just break an egg on top after the pizza came out of the oven and let the hot topping cook it some. -- James Silverton Potomac, Maryland Email, with obvious alterations: not.jim.silverton.at.verizon.not |

My plan for when I try it on Tuesday is to partially cook individual pizzas, break an egg onto the top of each one, then return them to the oven to finish cooking the pizza and egg at the same time. The original post in this thread gives the timing I intend to follow. Bob |

James, at home I would poach the egg and add it after cooking, because the pizzeria oven is so hot it is only in there 90 seconds or so. I think you are not going to get predictable desirable results in an oven that doesn't do that. I'd hate a solid yolk or runny white. |
