Default Dessert Tonight

I decided to make Rhubarb Custard Cake using Barb Schaller's recipe. I
plan to serve it with sliced strawberries. Strawberries and rhubarb
came from our garden.

Sounds so good!! The strawberry/rhubarb combo is so good.

I have discovered that a raspberry/rhubarb hold up better when
combining for a pie. Strawberries just "collapse" when baking in a
pie. .....but the flavor is good.

Enjoy your creation...sounds very good.

Dessert tonight is a rhubarb pie. Sorry, but it is straight rhubarb. I
refuse to waste good strawberries on a rhubarb when it is pretty close
to perfect on its own.


Dang. That pie looks good. I have to get out and grill some steaks
before the rain returns.

I love straight rhubarb pie - no "cream," or strawberries, please -
just rhubarb with a lattice crust. Yum.

I would be alternating strawberries and rhubarb.

Rhubarb is out now around here. Strawberries are a good month away.
Rhubarb needs to be cooked, but strawberries are too good fresh to be
cooked.

What would you rhubarb purists do if you had both rhubarb and

Use the berries to make a fresh strawberry pie (or shortcake) or make
jam, or freeze some for making jam in November; use the rhubarb for
bars, jam, bread, desserts or a combo jam (rhubarb orange is very good).
But that's just me.

Rhubarb Pie and Strawberry Shortcake - both fruits can be frozen
successfully, although the rhubarb tends to get a little mushy.
Still, where is it written that they have to be combined?? Anyway,
one could also certainly use them together in a smoothie, which I
don't like but some people do.

That's what started this thread, Janet - we were supposed to answer
the question, "What else do you do when rhubarb and strawberries are
both ready to harvest?" ;-) A couple of us said we would never ruin
a rhubarb pie by adding strawberries to it.

Personally, I think that the best thing to do with nice fresh
strawberries is to have them as close to natural as possible, plain
strawberries, or to have them with cream and maybe a bit of sugar, with
sour cream and brown sugar or slice one ice cream. I do not like
strawberry pie. If there is a glut of them and you have made as much
strawberry jam as you can handle, perhaps they can be made into a sauce
or conserve.


Rhubarb, IMO, is wonderful stuff with which to make a pie. Strawberry
does nothing to enhance it, nor does the rhubarb enhance the
strawberries, IMO, a strawberry rhubarb pie is better than a strawberry
pie.

I will be freezing some of each, making jam or jelly out of each one
and possibly combined. Main thing is that both of us are trying to
lose weight and have to keep an eye on cholesterol. Slows down pies
and cakes.

I agree with you on that. I don't like cooked strawberries, although I'm
willing to make an exception in the case of a strawberry custard for ice
cream.
