A local restaurant to me once made the most magnificent apple pancake to be
had in the Western 48. Alas, like all good things, this iconic dish was unable to maintain the standards necessary to retain its crown. I've attempted several recipes in the past attempting to recapture the magic but seem to have purged each failure so I have none available to review. Does anyone have an apple pancake recipe that they're willing to share. Many thanks! The Ranger |

I posted a message in reply to this request but can't seem to see any
postings with my newsreader, even though it did say 'message posted'. Just so you know I can see messages, cannot see my own postings but if you can get thread replies etc, that's ok then since I can see other people's postings. |

What was special about these? They have way more egg in the recipe than normal pancakes, and they are baked in the oven (at least finished in the oven) Not sure if I have a recipe... Bob |

Did I give you an apple topping recipe? No. If an apple is, as you state, baked with apple topping it is not a topping but an ingredient. I add other fruits to the batter and I'd do apples the same way. |

Granulated sugar 3 Tbsp. Butter softened Spiced Apples 2 large apples peeled and cored 2 Tbsp. Butter ¼ cup brown sugar 1 tsp. Cinnamon 1 tsp. Ginger 1. Preheat oven to 425 F 2. Whisk together eggs, milk, flour, salt and sugar until just mixed. 3. Place butter in a skillet on burner and heat on stove about two minutes until butter starts to sizzle. Pour batter into skillet and place in oven. 4. Bake 20-25 minutes until puffed and golden. 5. While pancake is baking, slice apples into 12 sections 6. Melt butter over medium low heat. Add ginger, cinnamon and sugar and stir together. Add apples and cook till soft, about 5 minutes. 7. Removed pancake from oven and serve with spiced apples. Pancake will not stay moved for more than a few minutes. Optional…. Garnish with sprinkle of icing sugar Serves 4 |

This one, however, should satisfy your curiosity. Puffed Apple Pancakes Ingredients: 1/4 cup unsalted butter, melted 4 large eggs, slightly beaten 3/4 cup milk 3/4 cup all-purpose flour 1 golden delicious apple, thinly sliced 1/4 cup dark brown sugar 2 tablespoons lemon juice warm maple syrup Preheat oven to 425°. Divide melted butter between four one-cup baking dishes. In a bowl combine eggs, milk, and flour until blended. Batter will be lumpy. In another bowl peel and thinly slice apples. Toss apple slices with brown sugar and lemon juice until coated. Divide batter evenly among baking dishes. Arrange several apple slices in a spoke pattern in the center of batter in each dish. Ok, finally got my newsreader problem fixed. The German Apple Pancake is my
bet that it is the recipe you are looking for. I love these while in Germany years ago and still make it every now and then for Sunday brunch. Willing to share recipe. Let me know. |
