Johnnycakes and griddled side pork. Lin put maple syrup on her johnnycakes;
I put peach-habanero jelly on mine.

The side pork turned out to be quite tough; I'll have to think of ways to
cook the remainder of the package so that it becomes tender.

Lin thought the johnnycakes were dry, but I was happy with them. This is the
recipe I followed:

1 cup cornmeal
3/4 teaspoon kosher salt
1 egg
3/4 cup water
Vegetable oil
2 teaspoons baking powder

Place the cornmeal, salt, egg, and water into a bowl and stir to combine.

Place a cast iron skillet or griddle over medium heat. Brush with vegetable
oil and heat until shimmering.

Add baking powder to the batter and stir in well. Pour enough batter onto
the skillet or griddle to form a 4-inch round, approximately 2 tablespoons.
[I used a quarter-cup disher.] Depending on the size of your griddle or
skillet, you can cook more than 1 cake at a time. [My griddle spans two
burners; I was able to cook three cakes at a time.] Cook until brown on both
sides, 2 to 3 minutes per side.

Serve immediately or transfer to a warm (200°F) oven until all of the cakes
are done.

If you want to modify the recipe so that the johnnycakes are more moist, you
can try any of the following tweaks:

1. Add a second egg.
2. Add sugar, any amount from a teaspoon to two tablespoons.
3. Add oil or melted butter to the batter.
4. Use whole milk in place of the water.

Just enough to coat the cooking surface. It doesn't go into the batter, so
there's no precise measurement.

Or, just for YOU, about a telemarketer's worth.

Then you should have said "Put about a 1/2 TSP or more oil in a pan,
and..." in the cooking instructions, not the ingredients list.

Yes, his cutting and pasting is getting pretty sloppy these days. He
probably has Carpal Tunnel Syndrome from all of that Keyboard Cooking
he does.
