I usually go simple with chicken, and make either chicken salad or soup.
The following are just thoughts:

Pot pie?

I might fill some of the KA buns with some, seasoned with maybe a little
barbecue sauce or just veggies and a light sauce

Chicken noodle soup? Tom kha gai? Chicken and dumplings?

Chicken fried rice?

I often cream chicken and serve it over noodles or toast

Julienne some veggies, season with sweetened rice vinegar, toss with
slivers of chicken, and wrap the whole thing in lettuce or spring roll
wrappers?

Lumpia wrappers are surprisingly easy to make (whir flour and salt with
enough water to make a paint consistency. Paint it onto a hot nonstick
skillet and let cook on one side) if you're feeling like something
time-consuming. :-)
