Default Baking soda

If you leave it out of your banana bread recipe, not only will the bread
not rise, it won't brown, either. At least that's what I heard. <cough>

Just how bad was it? My recipe doesn't use soda, just yeast and
sparingly at that as overripe nanners make it rise too high at times.

I made a quick bread, Jorge; no yeast involved. (That's just weird, btw
‹ yeast in banana bread.)

How bad was it? Bad enough that after the 45 minutes baking time, the
inside was not thoroughly cooked (not runny, but damp) and it was about
2/3 the height of the first batch of two.

Bad enough that they went right into the trash. AND, just for you, I
fished them out this morning for photos:

That's the only kind I've ever made, even before the bread machine was
invented. Always used yeast, now I use bread machine yeast but have to
cut the amount to half what the recipe calls for to keep it from opening
up the top of the machine. Does that with most sweet breads I make. That
reminds me I've got a couple of ripe bananas in the freezer. When they
get too soft to eat I toss them in the freezer door until I get enough
to make a loaf of banana/nut bread. Boy, once they thaw out they're
really mushy, just right for bread. Heck, they're already wrapped so
don't even have to wrap them up.

My ex-grandmother-in-law had the best recipe:

Banana Bread by Amanda Miller

2 bananas, mashed fine (med. size) 1/2 tsp. soda
1 C. sugar 1/2 tsp. baking powder
2 eggs 2 C. flour
1/4 tsp. salt 1/2 C. melted butter
3 T. milk

Beat eggs and sugar until light and thick. Add mashed bananas, butter
and milk. Fold in flour which has been sifted with dry ingredients.
Bake at 350 deg. F. for 45 minutes in a regular-sized greased and
floured bread pan. (This recipe works best in 2 or 3 mini-pans. Bake
these for slightly less time at 350 deg. F. - about 20 minutes.)

The year I had a cook-in at my house here in Albuquerque, I made
paella. Only I forgot to add the saffron.

LOL! Thanks. How could a person NOT laugh at that? It's just banana

You could add the dates afterwards... mix chopped dates with
creamcheese for spreading

I made corn bread stick once in my cast iron stick pan, and forgot
baking powder and/or baking soda, I forget which. Anyway, they were
cornmeal flatbreads. Inedible. ;-)
