Add 2 quarts water, 1 tsp. salt and herb bouquet garni* (fresh parsley, bay leaf, marjoram or thyme, 3-4 peppercorns in a cheesecloth bag). Simmer on low about 3 hours, stirring occasionally. Remove oxtails to a platter and let cool to the touch. Skim fat from soup. Remove meat from oxtails and add back to the soup. Stir in remaining 1 quart water and the vegetables. Simmer until vegetables are tender. Remove bouquet garni bag. Taste the soup and adjust seasonings. Stir in parsley and heat through. Jill (the Soup Queen) |

With the price of copper what it is now, they're making hollow-core copper wires. The resulting surface area is 60% greater allowing faster and clearer telephone and DSL communications. After installation of underground wiring, they have to blow out the lines. And overhead lines are prone to condensation which attracts dust. -sw |
