(As Mike's a toast fanatic I know he'll love this one)

I so enjoyed it that, while i don't make a lot of hollandaise, usually only when we have asparagus, but when i do i make an extra large amount just as an indulgence. Sounds a bit like brushetta. Thick, crusty slices of bread toasted on a grill. Rub garlic over one side when done. Place very thinly sliced tomatoes on each slice. Drizzle good olive oil on the tomatoes and top with teeth-sparking kosher salt. That's a recipe that I learned decades ago. There are many more, I think. |
