are they roasted?

opened a bag today and they have a distinctly cooked flavour

or were they stored too near the heating duct?

Usually, but not necessarily. Raw are usually labeled as such,
and if not labeled "raw", are usually slightly roasted (the
majority).

The raw nuts will of course be pastier, roasted are crisper.
