Quick green chili chicken stew
1 large boneless skinless chicken breast cubed 1 Onion diced 2 ribs celery diced 2 medium carrots diced 2 potatoes diced 1 large can green enchilada sauce (heat optional) EVOO for frying Sale & pepper Methodology Salt & pepper the chicken cubes Brown the chicken cubes in EVOO & set aside Add the onion, celery, & carrot & sauté till the onion is translucent Add the enchilada sauce, chicken, & diced potato. Cover & simmer till the potatoes are tender. (bout an hour depending on the dice) Optional extras whole kernel corn Diced Ortega or hatch chilies Lots of garlic Leftover veggies from the fridge Cheese for the top (pepper jack is nice) (note the only fat is the EVOO) Dimitri |

I use that oil for everything except Chinese where I use vegetable oil & butter which I use for eggs. Dimitri |

I was wondering at first what EVOO meant. I thought it was some kind of non-food cooking oil. In the very next post I saw it was extra virgin olive oil The recipe sounds good. When I lived in L.A. there were mexican restaurants on every corner, the smaller and more divey they were, the better the food. I loved the green chile pork burritos with beans and rice, but mostly the sauce. I have saved your recipe. Might come up with other stuff using yours. Thanks. TJ |
