Default Dinner last night Sun13Jun

1/2 a Bangalow rolled loin roast......

http://www.sweetpork.com.au/


Potatos and butternut pumpkin roasted in duck fat..... the potatos par boiled
and then 'fluffed' to make them crispy as..... and the seeds left in the
pumpkin.

And fresh green beans, topped, and bagged, and nuked on Low while the gravy
cooked.

Himalayan black salt used on the crackling......... *bloody* nice!!


And that pork........ damn!!!! I'm going back to the butcher to get more of
that!!

Sounds tasty Peter! ;-d

I just made myself 3 small spring rolls tonight for dinner with mixed
baby lettuce and spinach, romaine heart and smoked pork fine sliced.
Dressed it with a little pace medium picante sauce rolled up in
rice/tapioca wrappers.

Next time (hopefully) I won't be rushed, and I'll get some pics.

The pooch enjoyed the leftovers today anyways :-)


I could even hear the potatos still crunching in her jaws!! (A 'feature'
of duck fat roasted potatos...... even after a night in the fridge, the
suckers are still crunchy!!)

I shall have to save the duck fat next time I roast a duck or three.

A rather nice summer dish.......... or one eaten inside with the heater
on, ATM.

On Masterchef here, Marion( tipped to win) made a Cream cheese, lemon and
mint spring roll for a dessert dish.


Now *that* sounds interesting!!!
