Default Jimmy Dean: In Memoriam and Recipe

Jimmy Dean, country song writer, singer and founder
of Jimmy Dean Meats, died Sunday at age 81.

In memoriam, one of many variant recipes of his
eponymous Sausage Dip:

2# Jimmy Dean Sausage
2# Velveeta
8 oz Picante Sauce
2 cans tomato & green chilis (10.5 oz cans)

cook and crumble sausage, drain fat

add and melt Velveeta

add picante and tomato&chilis

serve warm with tortillas

I've enjoyed that recipe a couple of times, pavane. Here is one I
borrowed from my mother about a year ago.

Bean & Sausage Cornbread Caserole

1 (1-lb.) package ground pork sausage
1/2 cup chopped red onion
1/2 cup chopped green bell pepper
4 (16-oz.) cans pinto beans, drained (I used 1 lb, dried beans)
1 (14.5-oz.) can diced tomatoes with zesty green chiles, drained
1/2 teaspoon salt
1 (8-oz.) package shredded Mexican four-cheese blend
1 cup buttermilk
1 cup self-rising white cornmeal mix

1. Preheat oven to 425°. Brown sausage in a large skillet over medium
heat, stirring often, 7 minutes or until sausage crumbles and is no
longer pink. Add onion and bell pepper, and sauté 3 minutes or until
vegetables are tender. Drain. Stir in beans, tomatoes, and salt.

2. Pour sausage mixture into a lightly greased 13- x 9-inch baking dish.
Sprinkle with 1 1/2 cups cheese. Stir together buttermilk and cornmeal
mix, and spoon over cheese; sprinkle with remaining 1/2 cup cheese.

3. Bake at 425° for 25 to 30 minutes or until browned.

Black Bean & Chicken Cornbread Casserole: Substitute 1 lb. skinned and
boned chicken breasts, chopped, for sausage, and 4 (15.5-oz.) cans black
beans, rinsed and drained, for pinto beans. Stir 1/2 cup chopped fresh
cilantro into chicken mixture with beans.

at, but I can not handle the cold weather.

I always got a laugh driving past "AMRAP" street in Parma.

After getting out of school, lived in Parma for a while before ending
up in Middleburg.

Still remember there was a great deli on Ridge just north of Snow.

They made up great platters.

I'm not into country music but he certainly did do his own commercials. One
of my brothers worked for Jimmy Dean Foods (which was later bought out by
the Sara Lee Corporation). They had test kitchens in the basement. Every
once in a while the employees would be asked to do taste tests. They'd be
trying out different seasonings or new products lines. He'd get to bring
home free samples of stuff, too. (And here I thought free coffee was nice!)

And yes, Jimmy would come to visit. He said any time Jimmy showed up at the
office he'd insist on [literally] picking up each of the women and swinging
them around like it was a square dance. (This was the 1980's... well before
people had sexual harrassment suits on their minds.) And he always wore a
big belt buckle with the initials 'JD' in diamonds.

He-e-e-ey, those are my Barfburgers! You left out the green pepper and
garlic powder, though. I got the recipe 20 years ago from a bridge
pal. Sun City Special, indeed! Harumpphh! Having a container
available for quick snacks is nice, too. Not healthful, but tasty. :-\
(Beck loved them for her Superbowl party. Assembled ahead and ready to
pop into the oven.)

Many people who live in hot areas, dress in very few clothes. We wear
as little as we have to. It's too darn hot. A couple of pieces of
clothes, sunglasses and flip-flops are all you need, and sunscreen.
