I think it was on Sat. June 5th that I caught the WQED Cooks
show on WQED (where else?). I came in in the middle of Chris Fennimore preparing this dish so I didn't get the whole recipe. I looked on the website but it is not posted there. I've checked a couple of time thinking that they might not have gotten around to it yet but no luck. What he did was layer croutons on the bottom of an 9"x13" baking dish. Then he made a layer of thinly sliced zucchini. Then he added a layer of sausage. I missed what he put in with the sausage. That's mainly what I'm curious about. Then he added a layer of sliced fresh mozzarella (I think the was the order) and then sprinkled that with shredded Parmesan or Romane (can't remember which). Then another layer of zucchini and another layer of the croutons. (I think he made them himself as he mentioned everything being made from scratch.) Then more shredded cheese and dabs of butter. Then he baked it. I don't suppose anyone saw this show and happened to copy down the recipe? Oh, well, it was worth a shot. I can surely make up my own version of this but I'd sure like to know what was in the sausage layer. Sounds like something I might like too. I'm guessing that if the sausage layer doesn't have tomato in it, then there's probably some ricotta. -- Forget the health food. I need all the preservatives I can get. |

Maybe it isn't up yet. OTOH, this casserole sounds an awful lot like a zucchini/crouton (using herbed Pepperidge Farm croutons)/cheese/carrot (maybe) casserole that was popular around here a couple years ago.... I bet you could find it searching with those ingredients in a general recipe site. N. |
