Default Recipe for making wrap wrappers

I tried to make the wraps for wraps, but they are not as flexible as
the ones you buy. Is there a secret to making them? Also would using
masa harina flour cause any problems.

thanks

You want to make wraps like the tortillas that are a foot or more in
diameter? Were your homemade "wraps" flour or corn? Handmade
tortillas will be always thicker than store bought and thicker means
less flexible. Corn tortillas are not made burrito size, but they are
used for soft tacos.

I went through a make your own tortilla phase and concluded that it
was easier to purchase them pre-made. If you really want to do it,
you can find pre made masa if you look hard enough. I've switched to
that for making tamales. They have several kinds of dough, so be sure
to tell them what you want to do with it.

What is really cool is that the bigger grocery stores here and in TX
make tortillas fresh in the store. No preservatives so you have to use
them fairly quickly.

Heat softens both corn & flour tortillas.

Just heat a well seasoned cast iron pan or griddle & place the tortilla upon
it for a few seconds till flexible.

Caution a microwave will DRY the tortillas and make them brittle.

That's nice. Do they use a machine like they have at Chevy's or
something else?

Don't know Chevy's, but there are different kinds of machines in
different stores. Some are more automated than others. I am a sucker
for machinery like that and enjoy watching them work.

The one at Chevy's has glass sides so you get to see what's happening
inside the machine too. Keeps kids occupied watching tortillas being
made while they wait for their meal.

Are you using a tortilla press or rolling them out? You can get them
thinner if you roll them out by hand.
