Default Cool dinner for a hot night


Yesterday set a heat record for the date in Denver.
Last night's dinner was a chicken salad:


4 poached chicken breasts, chilled and cubed
(poached with quartered onion, celery and carrots)
finely chopped celery
finely shredded lovage leaves (just a few)
1 cup pineapple, cut into small cubes
(or sweet grapes, cut in half)


Dressing
Mix together:
good quality mayo (Hellman's) (maybe 3/4 cup?)
1-2 tsp. very finely chopped onion
1/4 tsp sugar or to taste
couple of Tbsp pineapple or orange juice
curry powder to taste
few grinds of black pepper

Add to chicken, mix well and chill.

Serve on lettuce leaves or pineapple shells
sprinkled with toasted slivered almonds

We also had fresh corn muffins with it and
Matua sauvignon blanc. Perfect.

You're making me homesick, dammit!

It sounds like a very interesting dinner, though I was a bit surprised to
see sugar in the dressing, since I'd guess the pineapple was plenty sweet.
The combination of curry, pineapple, and chicken sounds like a winner; I'll
have to give some thought to adding pineapple to Chinese curried chicken
sometime.

Were you also told not to eat pineapple? The recipe clearly says pineapple
OR grapes. Also, who told you not to eat grapes? Given that you hate
doctors, it was probably not MEDICAL advice, so why would you follow it?
Just some Burmese superstition?

I larf for joy in living here. Where I lived in CA, we'd pray it'd
drop back down to 93. Here, it's a record high. I love it!

Sounds good, I am saving this recipe. I had a chicken salad w/pineapple
recipe but it was several years ago .I believe I got it from Stephanie
da Silva.

Sometimes adding a wee bit or more curry to something unusual can really
add a zip to a dish and make it something very different, eh?!

Curry powder is good, with a bit of brown sugar added, in sour cream for
a dressing for fruit salad.

I often add it to homemade chicken-rice soup and my dad's arroz de
frango (arroz con pollo.)

My first taste of curry was at a Goan* restaurant in Lisbon in 1960
and it was love at first taste.

Sky, try Patak's Mild Curry Paste instead of those lame off-the-shelf
Schillings/etc powders. Make sure you get "mild" as so many of their
other curry pastes are relatively hot. Start half doses of the paste.

I apologize, then. The bandwidth here sucks, so I skip many, many threads
and even in the threads I do read, many posts get dropped. The grape thing
must have been in a post I didn't read.
