Default Naan with Tahini and Date Syrup dip


A little date syrup mixed with tahini and scooped up with the flat
bread of your choice. Be it lavash, naan or a tortilla, this makes a
wonderful treat, anytime of the day.
The date syrup-tahini dip is to be mixed to taste. You might want to
start out with an equal amount of each then adjust to your taste. I
prefer more tahini than syrup.

I didn't have any bread on hand so I decided to try my hand at making
Naan. I didn't realize before I Googled it that it was a yeast bread
that was rolled out and cooked as a flat bread. Dang, is it great.

I can get as far as the page with the list of albums, but they don't
open. I tried to join, but I don't have a personal web page and
that's required to sign up. Is there some trick to viewing the album?

I'd never thought about adding anything to prepared tahini before last
weekend, when someone added a drizzle of EVOO to it... so date syrup
is a new idea for me too. Did you buy it at Trader Joe's? What else
is date syrup used for? TY

I don't think I've ever seen date syrup. Where do you get it? (I don't have
to go to Palm Springs, do I?)

Wish you provided the link to that naan recipe. I used Manjula's
recipe on youtube. Need more practise I guess. It's just much easier
to pretend that pita bread as naan.

Just double click the album you want to see and it should open. I just

LOL, not a bad idea but not necessary. Actually it is common in the
area you are currently "visiting" I'll be more than happy to send some
to Lyn so you can have a nice treat when you get home, it is to live
for delicious.
I bought it in a little Mom and Pop grocery store out here in the
"boonies" the owners are from Baghdad and have a few Middle Eastern
products on their shelves. I love it because I get fresh from their
trees fruit, including dates and figs.

Okay, I know where to find Arab groceries back home. I wouldn't be able to
get it out in town here because "high value targets" are pretty much
confined to the base.

Lin is just about 100% occupied these days: she brought back 4 grandkids and
a daughter from Oklahoma, so between the cats and the dog and the kids she's
always got *something* demanding her attention.

For some reason, the page where all the albums are came up as a list
of titles only. Tried it again just now and the entire thing loaded.
I have no idea what went wrong last night. Saw the photos in abf
earlier today, thanks.

Thanks for posting about this. I have a ton of barhi dates in the
freezer from last fall. I think I could make some excellent date
syrup with them. After reading your post I went online to find
recipes for making my own date syrup. After I do that I will definitely
try your dip idea. Sounds yummy.

I also came across a recipe for Pumpkin Seed Pralines which
uses date syrup. I think I'll also try that. It sounds awesome.

You realize, I haven't actually tried this yet. I will try it
after I make the date syrup. I'll let you know how that turns out.
Not sure how soon I'll get around to making it though.

PUMPKIN SEED PRALINES

1 c. shelled raw green pumpkin seeds (pepitas)
1/4 c. honey, maple syrup, or date syrup
2 T. coconut milk (optional)
1/4 t. finely ground sea salt (optional)
1 t. cinnamon or 1 T. whole or coarsely powdered fennel seeds

Preheat an oven or toaster oven to 350F. Line a 9" cake pan or pie plate,

a 9"x12" or 8"x10" baking pan, or a rimmed baking sheet with unbleached

parchment paper or a silicone baking mat. Combine all the ingredients in a

bowl and stir to thoroughly coat the nuts. Scrape the mixture (nuts and

all the liquid) onto the prepared pan. With a lightly greased flexible

spatula or large spoon, spread the nuts one layer deep. Bake for 8-10
minutes.

Stir, then bake for another 5-10 minutes until the coating looks dry.

Check frequently after the first 10 minutes; nuts burn quickly.

(Seeds take less time than nuts.) Remove the pan from the oven. Let cool

for 5 minutes, and then turn the nuts over using a heat-proof spatula.

Bake 5-7 more minutes to crisp the other side. Place the tray on a rack

to cool. When cool enough to handle, break the nuts apart or place them on

a cutting board and chop into 1/4" pieces. Store in a covered glass
bowl or

jar in the refrigerator. Use within 3 months for best results. Makes 1
1/4 c.

or 20 servings. (If you leave out the coconut milk, the nuts will be
even more

crunchy. These crunchy, sweet nuts make a great garnish for green
salads, fruit

salads, or coarsely chopped and added to the ice cream maker during the
last two

minutes of churning or as a garnish at the table. Note: This recipe works

with a variety of different sweeteners, nuts, and seeds. Use light colored

honey for a mild flavor; use a darker honey for a stronger flavor.
Maple syrup

works equally well; each has a slightly different flavor.)

Variations:
Almond Pralines: Replace pumpkin seeds with shelled, raw, whole almonds.
Cashew Pralines: Replace pumpkin seeds with shelled, raw, whole cashews.
Sesame Seed Pralines: Replace pumpkin seeds with shelled, raw, unhulled
brown or black
sesame seeds. For a colorful effect, use a combination of the
black and brown sesame
seeds. These pralines will clump up more than whole nuts but
they’ll still taste great.
