![]() I've never made it, but I have a watermelon sitting in the refrigerator waiting for me to do something with it. I also have a huge pot of basil that needs to be used in something, so I was thinking of substituting basil for mint in the watermelon salad. Has anybody tried this? Seems like it would work and hubby is not a mint fan, so he won't mind. But if my idea is a disaster in the making - I need to know. TIA -- Forget the health food. I need all the preservatives I can get. |

TIA Not a disaster; watermelon and basil go together just fine. In fact, if you've got some strawberries around, they'd be good in the salad too. Bob |

I only replied to the troll because it sounded like she thought her first *order* would be free. We have a grocery delivery service here as well, and while it's great for saving time, I actually enjoy going to the grocery store and perusing the aisles. Since I've switched to eating more fresh/less packaged foods I end up going 3-4 times a week -- buying mostly just what I need for that day and/or the next. |

Soak the onions in a large bowl of ice water for 20 minutes. Drain, blot with a paper towel, and set aside. **(if you can't find a Vidalia, you can use a white onion) .. While the onions soak, whisk the red-wine vinegar, orange juice, honey, jalapeños, garlic halves, salt and pepper in a medium bowl. Set aside for 10 minutes, then remove and discard the garlic and slowly whisk in the olive oil. Taste for seasoning and adjust if necessary. .. Place the watermelon, green tomatoes, onions and fresh mint leaves in a large bowl. Season with a little salt and pepper, add the arugula and the dressing and gently toss to coat. Taste for seasoning and serve immediately. I must say though, that my two tomato plants in my Topsy Turvey planter have 12 teensy weensy tomatoes.
