Default watermelon and feta salad


I've never made it, but I have a watermelon sitting in the
refrigerator waiting for me to do something with it. I also have a
huge pot of basil that needs to be used in something, so I was
thinking of substituting basil for mint in the watermelon salad. Has
anybody tried this? Seems like it would work and hubby is not a mint
fan, so he won't mind. But if my idea is a disaster in the making - I
need to know. TIA

Not a disaster; watermelon and basil go together just fine. In fact, if
you've got some strawberries around, they'd be good in the salad too.

Wartymelon with cheese sounds disgusting, especially fehta. blech

I have one of those TX Dwarfs in the fridge now... wqartymelon gets

The basil will work just fine. Are you making Kimberly's watermelon
salad that calls for arugula also?

If you're a family of two or four buying groceries for the week, $50
is a drop in the bucket. But if all you want is a watermelon... it
will be a mighty expensive one!

No doubt! I only replied to the troll because it sounded like she thought
her first *order* would be free.

We have a grocery delivery service here as well, and while it's great for
saving time, I actually enjoy going to the grocery store and perusing the
aisles. Since I've switched to eating more fresh/less packaged foods I end
up going 3-4 times a week -- buying mostly just what I need for that day
and/or the next.

Watermelon Salad

salads/dressing

1/2 vidalia onion, thinly sliced
2 tablespoons red-wine vinegar
2 tablespoons orange juice (preferably fresh)
2 teaspoons honey
1/2 jalapeño, seeded, veined and finely; minced
1 small garlic clove, halved
1 teaspoon salt
1/2 teaspoon freshly ground black peppercorns
6 tablespoons extra-virgin olive oil
3- pound seedless watermelon, rind removed, cut into 1-1/2-inch chunks
(about 6 cups)
1 medium green tomato, halved and thinly sliced
1/4 cup fresh whole mint leaves
4 cups arugula, tough ends removed

.. Soak the onions in a large bowl of ice water for 20 minutes. Drain,
blot with a paper towel, and set aside.
**(if you can't find a Vidalia, you can use a white onion)

.. While the onions soak, whisk the red-wine vinegar, orange juice,
honey, jalapeños, garlic halves, salt and pepper in a medium bowl. Set
aside for 10 minutes, then remove and discard the garlic and slowly
whisk in the olive oil. Taste for seasoning and adjust if necessary.

.. Place the watermelon, green tomatoes, onions and fresh mint leaves
in a large bowl. Season with a little salt and pepper, add the arugula
and the dressing and gently toss to coat. Taste for seasoning and
serve immediately.

It has been my experience that unless you grow your own tomatoes they
are almost impossible to find, so I just carry on without.

I must say though, that my two tomato plants in my Topsy Turvey
planter have 12 teensy weensy tomatoes. I might just have the
opportunity to have that salad with them after all.

I find the "teensy weensy" tomatoes, sold as "grape" tomatoes have the
most flavor.
