correction: the NOT GUMBO was not to be sarcastic that Goomba DID actually
do this, but that it was beneath her....that the original poster who claimed
'Gumbo' was her arch (must have been doing eyebrow delineation at the time)

Default Funny things about some people

Reading a few posts in newsgroup (say a part-time Chemistry teaching
job at a college), some people think they can figure what a person
does for a living ... like I primarily teach. Teaching at the
college, occasionally at that, is only a strategy to get more clients
(at high school level in the neighborhood) for my private tutoring
business, which also is a side job for which I hardly have to do any
prep That's why I prefer easier level class at college like
"Chemistry for nursing program" versus Chemistry for Science majors.
My main job is not even in Chemistry, O ye clueless creatures.

Patches didn't steal anyone's picture of pizza. She posted it
originally and got lambasted by Sheldon (I think) over how imperfect
is was. I don't remember who it was who stole it and posted it as
their own, but I do remember it was you who literally sent her to the
other side of sanity with those t-shirts. It was a very mean time in
rfc.

You know, I haven't seen bad BG levels being used as a way to try to "get
away" with bad behavior elsenet. Self-diagnosed Asperger's or bipolar
disorder are the old-school favorites there, and (again self-proclaimed)
Asperger's and the ever-popular brain tumors for Munchausen-by-Internet
wannabes. (The brain tumor is especially brilliant for fakers because it
automatically puts anyone who challenges the odd behavior squarely in the
YOU BIG MEANIEHEAD camp.) But it's got the possibility of catching on.

I was inspired by a Guy's Big Bite show the other day and more or less
followed the recipe. I had leftover roast chicken and leftover
grilled chicken which turned out to be enough. The recipe called for
celery, but I don't use enough to merit buying an entire bunch of
celery and I wasn't going shopping where there would be a salad bar,
so no chance of just buying a couple of stalks. I made a fraction of
the following recipe, which fit into a 7 x 12 shallow Pyrex baking
pan. I used 4 carrots, 1 potato and 1/4 of a small bag of frozen baby
peas. The broth was a mixture of chicken stock and vegetable stock.
I added 8-10 drops of Lea and Perin Worcestershire sauce, 1/4 - 1/2
tsp thyme, 1/4 tsp garlic powder/granules and 1/4 cup of dry sherry to
the gravy. Make sure it's thick enough before you put it in the pan.
I added the potato cubes to the gravy while it was still in the sauce
pan to precook them.

Ingredients

For the Crust:

* 5 cups all-purpose flour, plus extra for board
* 2 teaspoons baking powder
* 1 teaspoon salt
* 4 teaspoons dried thyme
* 4 teaspoons dried sage
* 4 sticks cold unsalted butter, cut into 1 tablespoon pieces
* 12 to 16 tablespoons cold water

For the Filling:

* 3 tablespoons butter
* 1 sweet onion, diced
* 1 medium shallot, diced
* 5 celery stalks, diced
* 1/3 cup all-purpose flour
* 4 cups hot chicken stock
* 1 rotisserie chicken, meat removed and chopped
* 2 cups frozen diced carrots and peas
* 2 teaspoons dried sage
* Salt and freshly ground black pepper
* 1 egg, whisked, for egg wash
* Special equipment: 4 (5-inch) aluminum pot pie pans

To prepare the crust:

Directions

Combine 2 1/2 cups flour, 1 teaspoon baking powder, 1/2 teaspoon salt,
2 teaspoons thyme and sage in a food processor, pulsing until
combined. Add in 2 sticks butter, 4 tablespoons at a time, pulsing
after each addition until mixture forms coarse texture. Slowly add in
6 to 8 tablespoons cold water while machine is running, 2 tablespoons
at a time until dough balls up in processor to one side. Remove dough
onto a lightly floured board, cut in half and form into 2 (8-inch)
rounds. Wrap each tightly with plastic wrap and place in the
refrigerator. Chill for 30 minutes prior to rolling out. Repeat to
make second batch of dough.

To prepare the filling:

In large saute pan, melt butter over medium heat; add onions, shallot
and celery. Saute until just starting to brown. Stir in flour and
saute for 2 minutes. Slowly whisk in hot stock, stirring well. When
bubbly and thickened, about 5 to 6 minutes, stir in chopped chicken,
carrots and peas, and sage. Season to taste with salt and pepper.
Remove from heat. Let cool while rolling out dough.

To assemble pies:

Preheat oven to 350° degrees F. On lightly floured board, cut the
rounds of dough in half. Roll pieces into 6-inch rounds, about
1/4-inch thickness. Place a round in the bottom of 4 aluminum pie
pans and lightly press the sides and bottom to fit the shape of the
pans. Generously top with filling until full and slightly mounded.
Top with second piece of crust and pinch seams together. Cut 2 small
slits in top. Brush with egg wash. Place on a baking sheet and bake
for 1 hour to 1 hour 15 minutes or until tops are golden brown and
filling is bubbling.


Notes:

1. I made half the crust recipe and still had way too much to cover a
(shallow) 7x11" pan. I recommend 1 cup of flour and 1 stick of
butter.
2. Write down how much water to use in the crust so it doesn't end up
too wet.
3. I added dry sherry, some garlic, Worcestershire sauce and a little
thyme to the gravy.
4. I substituted potato for celery and used a combination of chicken
and vegetable stock.
5. Thicken the gravy adequately before cooking - it thinned out on me
this time, not sure why.

totally lost it. It started out as a joke

Someone posted the picture here as their own. As I recall, what sent
her ballistic was the fact that she was lambasted over a supposedly
crappy looking pizza when she posted it and then the thief was fawned
all over for posting exactly the same one. The incident illustrated
that rfc is structured like a social network in junior high school and
she found out where she was in the hierarchy.
