Allspice, it's missing allspice (a.k.a. pimento), the hallmark Jamaican
spice. The curry powder should really be Jamaican curry, not Indian
curry as there are differences. Scotch Bonnet peppers would be more
correct than cayenne also.

I especially like the look of that pastry. My reaction to the
filling is temporarily colored by the fact that I ate something
with MUCH too much thyme in it yesterday.

Pete,

I wondered about that but when only 1 out of 6 googled recipes had
allspice, I opted to go with out. The filling was too bland and sorely
missed it.

Jean,

Thanks about the pastry, it was the first time doing any pastry, it came
out flaky for sure, had to handle them gingerly or they would have
crumbled apart. This may resolve my fear of pie crusts altogether!

Goomba,

The filling in my borrowed recipe was indeed too bland for my taste's!

So take your pastry recipe and Emeril's filling and I think you'll enjoy
it very much!

It looks good but I always wonder with these so called (sorry) famous chefs
if their recipes are too modified from what a woman cooking in her kitchen
in Jamaica would make? Changed to suit American restaraunt goers who neve
had an authentic food. My thing is to have 'Mom's' recipe.

Anyway, I have the Rum! woohoo! so I may give it try in a few weeks. If so,
I'll post results! Thanks!!!
