Default Mmmm, enchiladas

I don't remember if I talked about the Rick Bayless chicken recipe my
kid was grooving on last week or so. I turned it into enchiladas, and
dayum, that shit's good. She has begged for it every few days, but
there's only so often I'm willing to go to the trouble of making
enchiladas (pics at the link in the .sig). Maybe I'll do the shortcut
version soon, where you just layer the tortillas and filling and cheese,
without wrapping anything up. We'll see.

Used Kili's pan again for this one. Damn, it's so unfair when the good
ones die young.

I had a similar dilemma when my kids became addicted to Swiss Enchiladas (the creamy kind). I ended doing just as you're pondering (instead of wrapping the tortillas, layering them.) Easy beans! And my rugrats still tear them up. Side of spicy rice and some mean beans, and you're in heaven. I like Rick Bayless; he's done more than his homework; he's gone first-hand. Way to go.
