Are there any good "fake" cheeses out there?
 
I love cheese, but since finding out I'm lactose intolerant, don't
indulge in it as often as I'd like. I know there are lactase pills you
can take that are supposed to help, but in my experience, sometimes they
work....and sometimes they don't. And as much as I love cheese, I
don't love it enough to look like I'm nine months' pregnant for a day or
two after I eat it!

I've been told there are good cheese substitutes made of soy or
whatever. Can anyone recommend any good brands?

there are some that are edible, but none of them taste like cheese.

I don't know of a non-dairy cheese that tastes like the real item. Some
are good at looking like it or have a similar texture, but the flavor is
nothing alike.


The more aged a cheese is, the less lactose. That usually means that
the harder the cheese, the more aging it has, but there are exceptions,
and that could be tripping you up. If you're up for experimentation
(and I wouldn't blame you if you weren't as the symptoms are nasty),
read up on how cheese is produced and choose cheeses that are made with
the most opportunity for the bacteria to convert the lactose.

I don't know of a non-dairy cheese that tastes like the real item. Some
are good at looking like it or have a similar texture, but the flavor is
nothing alike.

I don't entirely agree...

While it's difficult to really get the real texture of cheese,
I was once on a low fat kick and used to buy "Soy Kaas".
It even melted like real cheese pretty much. I liked it, and
they have a website. :-)

Now I just use mostly part skim mozarella if I want a low
fat cheese, and limit the portion. Dry grating cheeses such
as real parmesan can also impart a wonderful cheese flavor
with just a small amount... Don't bother with the canned stuff!
It's just not the same as fresh. ;-P

Exactly how certain are you that it's the lactose? Having the tablets
only work sometimes hints it could be something else you always eat
with the cheese or something other than lactose in the cheese.

I thought I might be lactose intolerant and the tablets sometimes
helped and sometimes didn't. I never got tested to be certain,
though. It turned out it was the wheat that was causing me the
problems. Times I'd eaten enough cheese to cause me indigestion
where with pizza or pasta. So try cheese without anything else
just in case.

Alternately maybe it's the dairy proteins rather than the lactose.
Consider trying cheese mae from sheep (good romano for example)
or goats milk rather than cows milk and if it doesn't give you
the problem then you know it isn't the lactose.

For years, even though I had gotten rid of my excess weight (OK, OK, I
confess...45 down, another 10 pounds to go!), I often looked like I was
about to give birth. Nothing helped - not diet, not exercise.

One day my best friend, who is a nurse, told me a woman came into the ER
and looked like she was about to go into labor any second, as her
stomach was so big. When the lady told her she wasn't pregnant, my
friend suspected a tumor or something, and wanted to have the woman
checked. (She came in for something entirely unrelated.) The lady
laughed and said, "No, I had a grilled chesse sandwich for lunch....my
stomach will be like this for a day or two, because I'm lactose
intolerant!"

So, my friend suggested that I cut out dairly products for a week or two
- not easy, since my favorite food is pizza! But, I did....eliminating
dairy was the only thing in my diet that I changed, and at the end of
that time my stomach was as flat as it's ever been.

Couple of weeks later, I met a blind date at Starbuck's. I was careful
to specify "NO whipped cream" on whatever (milk free) drink I ordered,
but they put it on anyway. I didn't want to make a fuss - this was a
man I had never met before - so I popped a couple of lactase tablets,
figuring a tablespoon or two of cream couldn't hurt. I won't go into
detail....
suffice it to say, I had arranged to be at my friend's house at a
certain time (my "out" so I wouldn't be stuck if I didn't like the guy),
and barely made it!

Since then, I've tried other "experiments." Like, I had the idea maybe
ordinary skim milk would be OK on cereal. Nope. The "results" are
within an hour or two of consuming milk products, so it's pretty
certain. :o(

Okay, that's a nice story. But what does it have to do with my
question? What I pointed out is that lactose isn't the only
thing that might cause that.

Starbucks is a custom place. if they get it wrong sending it back
does not count as a fuss. "I can't have any dairy. That's why I
ordered it with no whip. Is this one for someone else?" "No
ma'm. That one was supposed to be yours." "Oh. Make one no whip
please." "Will do ma'm."

I gave two suggestions of what it might be other than lactose: wheat
or the proteins in cow milk. Your Starbucks tale eliminated the
whet option.

It's still possible it's the protiens in the milk that you're
reacting to. Trying goat or sheep milk will tell that. Some time
in the future, when you're willing to get that bloat, try a small
glass of goat or sheep milk. They have different proteins but they
do have lactose. No reaction, it's the protein not the sugar.

To be certain, have an allergy test from your doctor.
