Default What's for dessert

Some friends are coming over for dinner. The appetizer will be
tortilla chips, guacamole and salsa. For dinner, we are having pork
tamales, chicken enchiladas, refried beans and Spanish rice. I am not
sure what to make for dessert. Something easy might be nice. Any
suggestions?

The easiest would be peeled oranges, sliced into rings 1/4 inch thick
and sprinkled with cinnamon. That's it. Doesn't sound like much, but
it's delicious and welcomed after a heavy meal. Image -

You could serve the orange slices with cookies (like Mexican Wedding

Something light:

Coconut ice cream? Pineapple sherbet? with plain cookies

Crispas? (Lightly fried flour tortillas sprinkled w. cinnamon-sugar)

A fruit mix (mango/strawberry/pineaple, etc.) with lime juice and honey
or mint sugar syrup.

Golden Vanilla goes with ANYTHING! Serve with sides of assorted syrups,
oreos, nuts, sprinkles, Amaretto, etc. So elegantly simple, it is SIMPLY
ELEGANT!

Almost hedonistic and decadent.

And there's nothing like some ice cream to put out the fire of spicy foods
and leave the palate with a "plateau effect", as in Masters and Johnson.
Ice milk, frozen yogurt, or Italian ice as a supplement.

I have been playing with nectarines, Amaretto, brown sugar,
almonds, and crushed Amaretti. I have been thinking about doing a
shortcake or a cobbler, or maybe a pie. I haven't quite decided
how to work the Amaretti in though.

A flan, arroz con leche (rice pudding), bunelos, chocolate cake made
