Default Salmon

Hello All!

One possibly encouraging sign: the catch of Sockeye Salmon is estimated
to be up greatly:

I do believe the price was surprisingly low when I bought some this
week.

I don't know of anything any better than a big fillet of salmon done
simply sauteed in butter with lemon juice.

Yes but sockeye is a tad less interesting than king/Chinook.

I as well have noticed low retail prices on fresh/wild sockeye
this season (often around $8/lb), as well as sockeye on many
restaurant menus. Clearly it's what's available.

We allowed ourselves to buy California king/Chinook three times
this season (the season is now closed). The final time was a
2 lb fillet, which we fruit-wood Weber'ed, and it was just
as good as I remember it being from past, bountiful California
seasons.
