Default REC: Shrimp with White Pepper

This is a nice quickie and the vegetables can vary depending on what you
have. Last night it was red pepper, red onion, celery and water chestnuts..

SHRIMP WITH WHITE PEPPER

3/4 lb shrimp, shelled
1 egg white
1 1/2 tbsp cornstarch
1/4 cup onion, diced
1/4 scallions, tops only, cut in 1/2-inch pieces
1 tbsp chopped parsley
salt
1/2-1 tsp white pepper

Marinate shrimp in mixture of egg white and cornstarch. Cook quickly in hot
oil and reserve. Remove excess oil. Stir-fry vegetables about 2 minutes or
until tender. Add shrimp and stir for 1 minute. Add salt and pepper.

Interesting recipe with the egg whites. What did you serve it with/on?

The egg white and cornstarch coating results in a crisp but light finish to
the shrimp. With a nice selection of veggies it stands alone, otherwise it
sits well on rice or with rolls.

I will try this. I might have to leave out the onions, even though I love
the flavor.
