Havent decided yet! We set it up already but not knowing he'd gotten it for
me (was supposed to be held for anniversary but the fellow dlivered
unwrapped. oopsies from Cabelas), I don't have oil to fill it. Having a
few beers so that trip to the store can wait (grin). I'll plot today
instead.

Apt to be Don's squid rings!

Our old one, a lovely Tfal safety fryer finally gave out after 16 years
about 2 months ago. Don's been making our few fried things in pans on the
stove which is why I didn't notice we were low on oil. He's been using more
than I am used to I guess!

Hehe Wok cooking is something I am not into. I don't do stir-frys much and
my heavy pans that are flat work fine for the level I need.

Naw, needed this to cut down tossing out the oil over and over. Our old
fryer of 16 years use finally died and we selected this one. It's about to
be christened either today or tomorrow. Had to go shopping today to get oil
so got that and lots of other goodies!

I'm not a big fan of stir-fry either. I rarely deep fry anything. But when
my mother deep-fried she used a wok. I still have that wok. In the 1980's
I had a "fry-baby". It was good for hush puppies! You didn't throw out the
oil, you just put the cover on and stuck it in the fridge.

Nice lookin' deep fryer there. I still use my cheapie to make tortilla chips(if you make the tortillas nice and thick, by hand, you get the greatest cxhip in history.

I'll only deep fry once every two weeks. But, it's great when I do. Perch is a sublime fish, as are bluegill, crappie (in season),walleye and northern (Y-bone filleted out). Once you fry fish, though, the oil is pretty much only good for fish. Fresh oil is important to taste and health. Still, I HATE canola. Corn or peanut, baby!!

After frying fish fry some sliced potatoes, takes the fishy taste
straight out of the oil. I have a used oil container in the pantry, use
it several times until it darkens and then discard. I filter it through
coffee filters to get crumbs and such out of it. I only use canola for
deep frying and EVOO for everyday use. Works for me.

That sounds good. I know you are using the shallots, but I would like a
lot of onion and green onion in mine. I go through phases like this.
